{"id":1170,"date":"2012-12-07T08:00:36","date_gmt":"2012-12-07T06:00:36","guid":{"rendered":"\/blog\/?p=1170"},"modified":"2012-12-07T08:00:36","modified_gmt":"2012-12-07T06:00:36","slug":"dessert-in-the-namib-desert","status":"publish","type":"post","link":"https:\/\/acacia-africa.com\/blog\/2012\/12\/07\/dessert-in-the-namib-desert\/","title":{"rendered":"Dessert in the Namib Desert!"},"content":{"rendered":"<p>Camping under the stars is something which a lot of our passengers list as one of the highlights of their trip. Few places can compare with Spitzkoppe when it comes to an amazing clear night sky. Out in the Namib Desert in Namibia, a long way away from man-made light pollution, a clear night in Spitzkoppe is something to remember.<\/p>\n<p>That\u2019s only one part of the attraction of the place though. Our campsite is surrounded by towering granite peaks that rise up to 700 metres above the surrounding Desert floor. As the sun moves across the sky, the colours of the rock change. Sunset and sunrise are simply stunning.<\/p>\n<p>On our recent SWS19 trip we arrived nice and early in Spitzkoppe which gave the passengers a chance to explore the Granite formations and take a guided walking tour of the area to see some of the rock art left behind by the Bushmen who have inhabited this area for countless generations.<\/p>\n<p>With the group off exploring, I had a chance to get busy in the kitchen and prepare my delicious Lemon Meringue Pie for Dessert in the Desert. (Recipe to follow).<\/p>\n<p>Preparing this type of thing in an Overland Kitchen without an oven or an egg beater takes a bit of hard work and ingenuity, not to mention a very sexy apron and a cold drink on hand. Fellow tour leader Emily was on hand to provide expert assistance.<\/p>\n<p>\u00a0<a href=\"\/blog\/?attachment_id=1176\" rel=\"attachment wp-att-1176\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1176\" src=\"https:\/\/acacia-africa.com\/blog\/wp-content\/uploads\/2012\/12\/IMG_40301-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" \/><\/a><\/p>\n<p>First of all I prepared the biscuit base and put it in our onboard freezer to set. Then it was time to cook up the lemon filling with nice fresh lemon juice and zest. We spread this over the base to complete our next step of the pie construction process.<\/p>\n<p>A few passengers caught onto what was happening and arrived back from their walk in time to lick the mixing bowl and spoon- just like you did when your Mum was baking.<\/p>\n<p>Then it was time to make the Meringue topping, done the old fashioned way \u2013 with a hand whisk. We took turns whipping this to perfection and spread it over the top of the lemon mixture.<\/p>\n<p>After covering with foil, we baked the pie Overland style, using charcoal. A few coals went underneath and a few on top of the foil to get the temperature just right. The baking time was measured to perfection \u2013 one drink\u2019s time.<\/p>\n<p>As the sweet smell drifted among the ancient rock formations, a colourful Agama Lizard appeared on a nearby rock. If he thought he would get a taste of the delicious dessert he would have to contend with 23 hungry travellers. Realising this, he didn\u2019t stick around for long.<\/p>\n<p>After the prescribed baking time the pie went back in the freezer.<\/p>\n<p>As the evening set in the passengers all came back from their activities with big smiles and excellent photos. We enjoyed a typically gorgeous Spitzkoppe sunset and dined on an excellent chicken Potije prepared by Emily.<\/p>\n<p><a href=\"\/blog\/?attachment_id=1173\" rel=\"attachment wp-att-1173\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1173\" src=\"https:\/\/acacia-africa.com\/blog\/wp-content\/uploads\/2012\/12\/P1020570-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>We cut up the pie and dished it up to everyone, feeling very proud of our efforts. It got a great response from the group and led to several requests for the recipe. (See below).<\/p>\n<p>The stars were shining as hoped and everyone slept outside admiring the night sky and looking forward to arriving in Swakopmund the next day.<\/p>\n<p>Lemon Meringue Pie Recipe.
