No visit to Africa is completed without indulging in some of its delicious cuisines. One of the delightful things about African food is it is simple, but tasty that has been combined with many flavors from many nations around the world when the early traders moved on the spice rich route around Africa.<\/p>\n

We, at Acacia Africa<\/a> take time to learn to cook these suburb local cuisines on an open fire, which is shared with hundreds and thousands of people that join us on board for the adventure of a life time.<\/p>\n

Acacia style \u2013 fit for a king and a group of 24 people.<\/p>\n

Chicken with Orange and Honey Stir Fry Vegetables<\/strong><\/p>\n

48 pieces of chicken<\/p>\n

1 \u00bd cups of honey<\/p>\n

1 head of garlic – diced<\/p>\n

2 thumb size pieces of ginger – diced<\/p>\n

5 large onions \u2013 diced<\/p>\n

20 oranges<\/p>\n

1 cabbage, (shred)<\/p>\n

1 bag of carrots (julienne or circles)<\/p>\n

2 heads of broccoli (Cut)<\/p>\n

2 heads of cauliflower (cut)<\/p>\n

Courgettes or Tofu (extra for vegetarians)<\/p>\n

2 kg of rice<\/p>\n

Boil water in a large pot and add chicken and simmer for 1 hour. Heat oil in a pan and fry onions, garlic and ginger. Add chicken and fry until brown. Squeeze the oranges and mix the juice with honey. Add this to the pan and simmer for 30 minutes (don\u2019t forget to leave some of the honey, ginger, garlic and oranges aside for the vegetarian meal)<\/p>\n

In a large fry pan Fry vegetables together in a splash of oil, pepper, mixed herbs, garlic. Serve as a side dish<\/p>\n

In a large pot bring water to the boil. Add rice. Cook for approx 15 min. Drain and serve with side veggies and chicken on top of rice.<\/p>\n

Vegetarian option \u2013 in a small fry pan fry onions, garlic, ginger, cauliflower, broccoli, carrots, courgettes and cabbage. Add a small section of honey and orange. Simmer for 15 minutes. Served with rice. ( Optional Tofu)<\/p>\n
