No visit to Africa is completed without indulging in some of its delicious cuisines. One of the delightful things about African food is it is simple, but tasty that has been combined with many flavors from many nations around the world when the early traders moved on the spice rich route around Africa.
We, at Acacia Africa take time to learn to cook these suburb local cuisines on an open fire, which is shared with hundreds and thousands of people that join us on board for the adventure of a life time.
Acacia style – fit for a king and a group of 24 people.
Bobotie, rice, salad and wait… desert (open fire stlye!)
5kg mince
2 onions
2 jar Mrs. Boll’s chuckney
60 ml of curry powder (add to taste)
30ml of turmeric powder (add to taste)
500 grams cake mix (sultana’s etc)
1 loaf of bread
1 litre of milk
6 eggs
2 kg of tastic (local African rice)rice.
Fry onions, turmeric, curry and mince. Add salt and pepper to taste. Take off heat once meat is cooked. In a separate bowl add bread and milk (enough to soak the bread and not too runny). Add bread, cake mix and chuckney. To the mince and stir. In a separate bowl beat 6 eggs with a bit of milk. Lay the mince in a tray and pour egg mix over mince. Place tin foil over tray to cover and place dish on scattered coals adding a few for the top of the foil (bake as an oven) Cooking time (40min) Served with rice (15-20min)
Vegetarians (If the client likes soy minces you can cook the exact same version as the meat. All you need to do is soak the soy mince – This is easily found at the supermarkets. Alternative meal would be stuffed peppers with cous cous and vegetables. Wrapped in foil and baked on the coals
Salad Add a simple side salad of 2 bags of tomatoes, 2 cucumbers and 3 carrots diced in cubes and served with a vinaigrette dressing
Dessert: Bananas, marshmallows and dark chocolate
Slit the banana on the inside (with skin on). Stuff I marshmallow and I piece of dark chocolate into the flesh of the banana. Wrap in tinfoil and place on coals until the chocolate and mallow has melted.
