N’DIZI NA KASTED (Zanzibar banana custard)

Whilst travelling on the African continent, we get to sample some of the amazing flavors and easy step to step recipes for a true tasty African desert. Since Zanzibar is the ‘Spice Island’ the strong use of cloves and cinnamon as garnish add greatly to the authenticity as well as the flavor for not only this dish, but many more desert dishes. Shop in the spice market or hop on a spice tour on Zanzibar Island and purchase these awesome ingredients and let’s get preparing!

Zanzibar style – fit for a Sultan and a group of 24 people.

Ingredients:

9 Cups of non baked custard powder (easily found in most East African shops)

1 – 2 liters milk – use as directed on custard powder box.

9 – 12 x ripe bananas (depending on size)

3 tsp cinnamon

2 tsp ground Cloves

1 tsp nutmeg

1 cup of sugar

1 cup of peanuts (finely chopped)

¼ cup of fresh coconut or desiccated coconut

½ fresh pineapple

Directions:

In a bowl prepare the custard and set aside. Slice the banana’s and place in a large tray. Pour the custard over covering the banana’s and place in the truck fridge until custard is set.

In a small bowl mix the cinnamon, ground cloves, nutmeg, sugar, finally chopped peanuts together. Once custard is set sprinkle over evenly.

For the extra sweet tooth – serve with some grated fresh coconut and diced pineapple!
