Have you ever wondered what the groups are cooking on the road every day on one of our overland tours? Our Acacia crew will be sending 1 favorite recipe of the month to share. Cooking for 24-26 people can be challenging, but I am not going to deny it… totally fun! This month:

Game steaks, warm potato salad, coleslaw and pot bread

Serves 24 – 26 people

Namibia is certainly the BEST place to get game streaks for a brilliant price. A series of game steaks to choose from are: kudu, gemsbok, impala, springbok, eland and zebra… Why not try them all!

Game Steaks –  200 – 250g – kudu steaks each

Potato Salad –  5kg potatoes (or 1 large each) , Butter, 1 head of garlic, 1 bunch of fresh basil (dry can be used as an alternative), Salt and pepper

Method: Cut potatoes in chunks (approx 4cm chunks) boil until soft. Drain water. Add butter, herbs, garlic and salt and pepper. Serve hot.

Coleslaw salad –  Mayonnaise, 1 cabbage, 1 bag of carrots, Grate the carrots and shred the cabbage. Add mayonnaise, salt and pepper to taste

Poitjie pot Bread – 1 kg of flour, 15ml salt, 1 ale beer, 15 ml margarine (double this if you  need 2 breads!)

Method: Sift the dry ingredients together. Add ale beer to form stiff dough. Kneed the margarine in. Grease the black potjie pot with butter and sprinkle little flour(flat cast iron pot). Place dough in and put lid on to allow the dough to rise for 40min. Place the potjie pot on spread out coals also placing a few on the lid (to make and oven effect). Bake for approx 40min-1hour until crust is brown – why not add olives, basil and garlic for a different flavor!

Vegetarians: ½ butternut wrapped in foil. Baste butternut with cinnamon and butter. Wrap in foil and Cook on coals (1/2 hour – or until soft) Served with potato salad, Coleslaw and bread
