Whats cooking on route? A true Africa adventure is not completed without indulging in some of its delicious cuisines. One of the delightful things about African food is it is simple, tasty and it has been combined with many flavors from many nations around the world. This week we have received a recipe for a traditional South African Braai cooked by the crew of Acacia. Check out the recipe below:
Braai , Mielie Pap , Salad and Garlic bread
48 chops
4 x Boerewors
2 kg Mielie meal
4 x tins of mild chakalaka (or braai relish)
2 loafs of bread
3 tins of corn kernels
12 cups of water,
4 teaspoons salt
To make Mielie Pap – Boil water. Add salt and maize meal and stir. Reduce heat and cover with lid for 10 minutes. Whisk and cover again for 30 minutes. Add sweet corn and set aside.
Braai meat on cooking grid
In a sauce pan heat the braai relish. This served with the mielie pap
Cut the sliced bread in half and butter each side with garlic butter. Wrap In tin foil and bake on light coals.
Vegetarian option: Vegetable fritters – ½ cup flour, ½ tspn salt, ½ tspn curry powder ½ tspn baking powder, ½ cup milk, 1 cup grated mixed vegetables of choice. 1 egg white. Place all dry ingredients in a bowl. Add milk to make a batter. Add all vegetables. In a separate cup beat the egg white. Fold with batter. Head fry pan and add tspn of mixture and cook fritters.
Salads: Add a raw spinach salad with plum tomatoes, avo (in season) and pickled onions – 2 x bunches of spinach, 1 bag of tomatoes, 6 avocado’s, 1 jar of pickled onions
